Makes about 6 servings
Ingredients
3 medium sized sweet potatoes
Olive oil, as needed
Salt to taste
Crushed pepper to taste
Directions
Preheat oven to 375°F.
Line a sheet pan with parchment paper.
Cut sweet potatoes into cubes of uniform size, approximately 1 inch.
To a sheet pan, add olive oil and sprinkle salt and pepper on top of the sweet potatoes. Toss to coat.
Roast for 20-25 minutes or sweet potatoes are soft and desired browning is achieved.
