Makes 4-6 servings
Ingredients
10 large eggs
1/4 cup grated Parmesan or cheddar cheese
1 tsp. granulated garlic
1 tsp. granulated onion
1/4 tsp. salt
1/4 tsp. black pepper
2 Tbsp. milk, Greek yogurt, or sour cream
8 oz. (by weight) baby spinach (washed, dried, and torn into pieces)
Directions
Heat oven to 400º F.
In a large bowl, whisk together eggs, cheese, garlic, onion, salt, pepper, and sour cream. Set aside.
Place baby spinach in the bottom of a 9-inch oven proof skillet or deep dish glass pie pan. Pour egg mixture on top.
Bake for 25 minutes or until center feels firm and springy.
Variations
Add chopped fresh herbs (during cooking with egg mixture or to top after frittata is baked)
Add crumbled bacon or sausage
Change up the cheese – try gouda, Swiss, pepper-jack or your family’s favorite variety
